Layered Zucchini & Yellow Squash Casserole

2 medium yellow squash, thinly sliced
2 medium zucchini, thinly sliced
1 medium onion, thinly sliced
1/2 large green bell pepper, sliced in strips
1 cup fresh mushrooms, sliced
1 large tomato, sliced
salt and pepper, to taste
2 tablespoons butter
2 tablespoons grated parmesan cheese

Directions:Prep Time: 10 mins
Total Time: 45 mins
1 Lightly grease an 8 inch square baking pan (or spray with Pam). 2 Layer the vegetables in the order listed, sprinkling each layer with salt and pepper as desired. 3 Dot the top with butter, and sprinkle with Parmesan cheese. 4 Bake at 350F for 35 minutes or until crisp-tender.
